Authentic Fleur de Sel is harvested in the Guerrande region of France. The salt is often referred to as the "caviar of salts", and many world-renowned chefs consider this the best sea salt available. It is harvested from the very top layer of the famous French salt ponds. The unique shape of the young crystals are formed as they grow downward. It is hand-harvested, and can only be collected under the right conditions, and at certain times of the year. As the crystals form, the trace minerals from the sea water rise to the top of the ponds giving the salt its full and balanced flavor. As this is the premium salt in the ponds, there is limited Fleur de Sel produced. This salt is best used as a finishing salt, as it breaks down other herbs and releases individual flavors in foods, and will enhance any gourmet meal. The Fume de Sel Salt is unlike any smoked sea salt available. Fleur de Sel is cold smoked with Chardonnay oak chips to preserve the mineral content and natural flavor of the salt.
